About

At Augustin's sheepfold, Romain raises ewes with love, passion and respect under the organic farming label. In the heart of the Comminges, facing the Pyrenees, the flock enjoy the good grass of their meadows.

In the small village of Cassagnabère-Tournas in the Haute-Garonne, the flock of ewes spends most of its time outside, grazing on the grass in the meadows. If the weather is not to their liking, they can also stay in the shelter of their comfortable tunnel-shaped sheepfold.

Their preferred breed is the Tarasconnaise, a hardy local breed. It is perfectly adapted to mountain areas, which is why their ewes spend the summer in summer pastures.

The ewes are reared under the organic label: the animals receive veterinary treatment only when necessary, their feed is 100% organic, and no chemical inputs are used on the land. These good practices are checked every year.

The ewes eat grass, hay harvested on the farm and a mixture of cereals, all 100% organic.

As for processing, everything is done locally, right up to the cutting.

The Charter of Commitment was developed by and for professionals in partnership with the Comminges-Pyrénées Tourism Office. It highlights producers from all fields and chefs who work according to best practices, promote Comminges products, and share their respective expertise.

The guide “Goûts et Saveurs en Comminges” is not just a directory of businesses. It is much more than that. As you turn the pages, you’ll also find recipes, profiles, and interviews.
