About

Les Fromagers du Mont Royal has been a family business for 4 generations. The director, Dominique Bouch, was elected Meilleur Ouvrier de France in 2011.

Dominique Bouchait continues to build on its expertise in maturing and creating cheeses. Two of his employees have been awarded the "Lyre d'or", a prize that rewards the creation of a cheese platter based on the following criteria: mastery of professional gestures, choice and quality of products, and the aesthetic appeal of the composition.

The star cheese is Napoléon, a soft-hearted cheese from the Pyrenees.

Even as old as it is, tradition dictates that this ewe's milk cheese is still rich in suppleness.

It owes its name to the mountain opposite the cellars, "Penne-Haute", nicknamed "Nez de Napoléon" because of its shape.

You'll find their other specialities, Régalis (sheep's milk blue cheese, very lightly salted and very soft), Cornu des Pyrénées (mixed ewe's and cow's milk), Baraillan (ewe's milk), Pipoune and many others at open-air markets or in their shop in the Pôle Leclerc shopping centre in St-Gaudens.

New - The Tastes & Flavors Guide

While eating well without breaking the bank is a major concern for our fellow citizens, short supply chains are thriving in Comminges. Now more than ever, there has been a growing need for a guide that lists producers, restaurateurs, and food professionals who sell their creations directly to consumers and work with local products in an ethical manner.

From Farm to Table with Complete Transparency: The Charter

The Charter of Commitment was developed by and for professionals in partnership with the Comminges-Pyrénées Tourism Office. It highlights producers from all fields and chefs who work according to best practices, promote Comminges products, and share their respective expertise.

The guide “Goûts et Saveurs en Comminges” is not just a directory of businesses. It is much more than that. As you turn the pages, you’ll also find recipes, profiles, and interviews.
